What we hold and what comes next
We publish our certification status honestly: certifications we hold today, and those currently in progress. In an industry of vague claims, we prefer precision.
SANIPES
Certified by SANIPES, the Peruvian national fisheries health authority, covering sanitary standards for aquaculture production and processing for export.
Kosher
Our products are processed under kosher certification through our certified processing partner.
EcoCert
Certification process underway. EcoCert audits organic and ecological production practices, we are building toward full certification.
ASC
Working toward Aquaculture Stewardship Council certification, the most demanding international standard for responsible aquaculture.

Traceability
From pond to pallet, every fish has a file
Traceability at Amazonian Reserve is not a slogan. It is a documentation system that follows every fish through its entire life:
Each production lot records the hatchery cohort, the pond, the feed batches consumed, the harvest date, the processing run, and the export documentation. When a chef in Miami or Paris receives a fillet, that fillet's history is a paper trail we can produce on request.
Because everything happens on one site, breeding, raising, harvest, processing, freezing, there are no blind spots between links of a chain. There is no chain. There is one place, one team, one record.

Cold Chain
Frozen at the source, controlled to delivery
Fish are processed and IQF frozen at 0°F (−18°C) on-site, within hours of harvest, then individually vacuum-packed. The cold chain is unbroken from our freezers to the export container to the destination warehouse.
All exports comply with US FDA and FSMA requirements, with full documentation for customs and sanitary inspection in every destination market.
