Paiche
Arapaima gigas, known as pirarucu in Brazil
The giant of the Amazon, and one of the largest freshwater fish on Earth. Its flesh is firm, white, and completely boneless once filleted, in the culinary class of halibut and Chilean sea bass, with an identity entirely its own.
Chefs value the paiche for its clean flavor, elegant flake, and stable performance across techniques: raw in ceviche and tiradito, wrapped and steamed in patarashca, seared, grilled, or roasted. It holds structure, takes flavor generously, and plates with real presence.

The most prized freshwater catfish in South America, and the jewel of the Peruvian Amazon. White, delicate, boneless flesh of rare refinement, with an elegance on the plate that has made it legendary among those who know it.
